Ingredients for 4 servings
For the semolina schmarrn
- 250 g semolina
- 500 ml milk
- 1 tsp salt
- 60 g butter
- 1 tbsp vanilla extract
- 50 g raisins
- 50 ml STROH 80
- icing sugar
For the apple sauce
- 500 g apples
- 50 ml STROH 80
- 1 vanilla bean
- 2 cinnamon sticks
- 2 cloves
- zest of 1 organic lemon
Preparation
For the semolina schmarrn
- Put milk, salt and vanilla in a pot and bring to a boil.
- Remove from the heat and whisk in the semolina. Allow to cool.
- Soak raisins in STROH.
- Melt butter in a pan. Add semolina mass, rip into pieces and sear until lightly browned.
- Add raisins and STROH.
- Dust with sugar before serving.
For the apple sauce
- Peel the apples, cut into small pieces and remove the seeds.
- Put all the ingredients into a pot and bring to a boil.
- Simmer on medium heat for 15 to 20 min until the apples are soft.
- Remove all the spices and blend into a sauce.
