For the calamansi honey
- 10 cl calamansi puree
- 250 g honey
For the Cocktail
- 3 cl STROH 60
- 3 cl herbal bitters
- 3 cl calamansi honey
- 2cl lime juice (freshly squeezed)
- 2 dashes Fee Brothers black walnut bitters
- tonka bean
Preparation
For the calamansi honey
- Thoroughly mix 10 cl calamansi puree (Boiron or Ponthier brand) with 250 g honey.
For the cocktail
- Shake all ingredients vigorously with ice cubes.
- Strain into a cocktail glass and top with grated tonka bean.
